The best thing to do is&lt;br&gt;ask your cheese guy for something mild that will melt well and mix that with&lt;br&gt;parmigiano-reggiano.&lt;/p&gt;&lt;p&gt;When are you coming? The reason I like the grill is because it is a lot easier to get a really thin, crispy crust.  I've also had some messy disasters making pizza in the oven, so it's nice to avoid that.&lt;/p&gt;&lt;p&gt;Anyway, love to hear about some of the things you guys are making.&lt;/p&gt;&lt;p&gt;Talk soon... We made this tonight and it was delicious!  I used a no-yeast crust I've used for cocas before, as we were already starting cooking pretty late.  I'll have to experiment a bit more with the crust, it doesn't crisp up the way I'd like.  But, we also had to cook it in the oven because our grill is out of gas.  :)  Thanks for the great food ideas.
